- Plans, coordinates and evaluates work activities to optimize employee efficiency and staffing.
- Respond to all employee and resident grievances related to department services in a timely manner.
- Plan weekly menus which meet requirements and offer variety.
- Plan menu and prepare foods for special events.
- Adjust menus in accordance as needed to utilize foods in the refrigerator and freezer to prevent waste and spoilage.
- Maintain appropriate inventory and requisition food and supplies from approved suppliers. Ensure proper food storage and labeling/dates.
- Identify adaptive equipment or altered food preparation procedures to assist residents in maintaining an independent eating function.
- Develop and ensure execution of daily prep list.
- Ensure that all equipment is properly holding temperatures: refrigerators, freezers, ovens, dishwasher, and steamtable.
- Develop and implement and assure weekly refrigerators (inside and out), shelves, etc. are sanitized, labeled and rotated.
- Develop implement and assure monthly freezer rotation and cleaning.
- Review invoices and purchases.
- Monitor dietary department budgets and assure spending is kept within the established budget.
- Turn in all invoices and receipts to Facility Director for payment.
- Exercises stewardship by dealing responsibly with corporate resources at all times.
- Accountable for the supervision of the personnel and functions of the dining operations of the facility, with the responsibility for the development, implementation and evaluation dietary policies and procedures. Responsible for the supervision, education and training of dietary personnel.
