General Purpose: Key Liaison between Sales and Operations, controlling costs and expenses while optimizing quality.

Job Description: The Senior Production Manager Value Added will serve as the key bridge between Sales, Fabrication (FAB), and Value Added (VA) operations. This role is responsible for ensuring alignment between customer needs and expectations and production capabilities. The person in this role will also manage raw material flow, ensuring yield and efficiency standards are met or exceeded and driving lean expense management. The Senior Production Manager VA will be responsible for production reporting, scheduling, and labor planning to ensure operational excellence, control costs and increase profitability.

Key Responsibilities

Sales & Customer Alignment

  • Participate in weekly sales meetings to understand customer needs, including product specifications and packaging requirements.
  • Develop and propose new and featured items, byproduct offerings, and the benefits of selling Value Added products.

Operations & Raw Material Coordination

  • Act as the primary liaison between FAB and VA operations.
  • Manage the inventory of raw materials to facilitate maximum production.
  • Conduct daily meetings with operations leadership to understand grading and raw material availability.
  • Evaluate and improve raw material delivery practices (combos vs. boxed product) to reduce purge, size issues, and inefficiencies.

Production Management

  • Own the daily production report, reviewing room performance, yield results, and raw material usage.
  • Identify opportunities for yield improvement and direct focus areas for testing.
  • Lead daily meetings with production management to track performance and address challenges.
  • Own the production schedule, balancing lines to minimize wait times and equipment changeovers.

Run Rates & Labor Optimization

  • Develop and maintain accurate run rates for VA products.
  • Incorporate run rates into yield testing, production scheduling, and labor planning.
  • Implement labor goals and standards to improve efficiency.
  • Develop specs to optimize run time and labor costs.

Expense Management (Lean Principles)

  • Accountable for VA operations P&L
  • Responsible for managing labor costs, operation equipment and related expenses
  • Control packaging costs and ensure they are appropriately captured in pricing formulas.

Experience

  • Minimum 10 years’ experience in steak cutting operations including:
  • Production scheduling
  • Yield tree management and Efficiency testing / optimization
  • Labor management
  • Developing training programs for skilled steak cutting knife work
  • Utilization of automatic steak cutting equipment

Qualifications

  • Strong understanding of beef fabrication and value-added operations.
  • Experience with production scheduling, yield management, and labor optimization.
  • Skilled in lean manufacturing principles and waste reduction.
  • Excellent communication skills with the ability to bridge cross-functional teams.
  • Proven ability to manage P&L and drive operational profitability.

  • While performing the duties of this job, the employee will work in both a plant-based office area and warehouse/receiving areas.

  • This position will require Regularly lifting 25-30 pounds and occasionally up to 50-75 pounds. May be required to push or pull loads up to 100 pounds.
  • Regularly required to stand, walk, and sit for long periods.
  • Often required to reach with hands and arms. Will need to climb ladders, balance, stoop, kneel, crouch, or crawl.
