Overview

The Pizza Dough Maker is responsible for producing, portioning, and preparing dough to exact specifications for distribution to multiple pizza shops. This role ensures dough consistency, food safety, and efficiency while maintaining the highest quality standards that represent our brand.

Key Responsibilities

• Prepare pizza dough daily following company recipes, formulas, and batch sheets.
• Operate, monitor, and clean mixers and other dough-making equipment
• Weigh, portion, and ball dough to specification.
• Properly label, store, and rotate dough according to food safety and FIFO standards.
• Maintain production logs, temperature records, and quality control checklists.
• Work with Kitchen Manager to meet daily production schedules and adjust as needed for volume demands.
• Package and prepare dough orders for delivery to multiple store locations.
• Uphold sanitation standards and ensure compliance with health and safety regulations.
• Assist with inventory of flour, yeast, and other raw ingredients; communicate shortages or issues.
• Support commissary team in other prep and production tasks as needed, prep of sauces, dressings, cooked meats etc.
  
  
  

Essential Skills

• Ability to follow recipes and procedures with precision and consistency.
• Strong attention to detail, especially with weights, measurements, and quality standards.
• Physically capable of lifting to 50 lbs. and standing for extended periods.
• Comfortable working in a fast-paced, team-oriented environment.
• Dependable, punctual, and able to work early mornings or flexible shifts as required.
