Cook ll is a senior-level culinary role responsible for leading the preparation and execution of savory items such as composed sandwiches, salads, and light entrées served at Emma’s. This role requires advanced culinary skills, speed, and precision, with the ability to work independently and mentor junior cooks in a refined, boutique kitchen environment.

Primary Responsibilities

  • Lead daily savory production including mise en place, cooking, and plating of composed sandwiches, salads, and light entrées served in the boutique and restaurant.
  • Ensure consistency and excellence in flavor, texture, and presentation across all savory items, adhering to Emma’s brand standards.
  • Collaborate with culinary leadership on seasonal menu development, recipe refinement, and special event offerings.
  • Train and mentor Cook 2 and junior team members, providing guidance on technique, station organization, and service readiness.
  • Manage prep schedules and production timelines, ensuring all components are ready for service and special events.
  • Monitor inventory levels, assist with ordering, and ensure proper storage, labeling, and rotation of ingredients.
  • Maintain a clean, organized, and efficient workstation, enforcing sanitation and food safety protocols throughout the shift.
  • Communicate effectively with FOH and BOH teams to ensure smooth service flow and timely execution of orders.
  • Stand and walk for extended periods, often for the duration of a full shift.
  • Bend, reach, and stoop frequently during food preparation and station maintenance.
  • Lift and carry items weighing up to 50 pounds, including bulk ingredients, kitchen equipment, and food containers.
  • Work in a fast-paced, high-temperature kitchen environment with exposure to ovens, grills, and other heat-producing equipment.
  • Use hands and arms for repetitive tasks such as chopping, mixing, plating, and cleaning.
  • Maintain focus and attention to detail in a busy, high-volume setting.
  • Communicate clearly and effectively with team members and leadership, both verbally and in writing.
  • Safely operate kitchen tools and equipment, including knives, slicers, mixers, and grills.

Qualifications, Education, Experience, Skills And Abilities

  • 3–5 years of professional culinary experience, preferably in upscale or boutique environments.
  • Strong knowledge of savory cooking techniques and station management.
  • ServSafe Certification required.
  • Culinary degree preferred.
