Job Description

It is the primary responsibility of the Director of Beverage to oversee all beverage operations and related marketing, while developing standards for products and services relating to the division that are suitable for a world-class resort. Director of Beverage inspires, motivates, ensures accountability of the team, and supports the Company and Hotel’s culture. All duties are to be performed in accordance with departmental and property policies, practices, and procedures.

Job FOCUS

  • Establishes accountability processes for all Beverage outlets; ensuring compliance with the company’s status quo third party representation philosophy, company policies, legal requirements and collective bargaining agreements.
  • Develops on-boarding and on-going training programs that inspire a culture of passion for beer, wine, spirits, salesmanship, hotel policies and service.
  • Builds a culture of engagement with direct reports and staff by understanding the drivers of employee engagement relative to their respective department and individual staff members.
  • Develops direct reports with an emphasis on functional and technical leadership competency growth that prepares them for their individual career path and addresses gaps in bench strength in the company.
  • Actively recruits and selects appropriately skilled staff to represent venue and property brands.
  • Educates managers on the importance and how their department performance contributes to property and company goals.
  • Equips self and direct reports to create development plans for each staff member, and to properly train and equip them to mentor and coach staff.
  • Utilizes Employee Surveys, manager one-on-ones, town halls, and other forums to gain insight that guide strategies to improve employee engagement and culture of performance accountability.
  • Creates and fosters an environment of risk taking and innovation.
  • Collaborates with team to develop and implement employee engagement strategies.
  • Support the Vice President of Food & Beverage in the development and implementation of the Strategic Plan and Vision for the Division consistent with the Company’s Objectives.
  • Maintains excellent knowledge of venue’s beverage products, menu items and equipment used to perform duties.
  • Provides input/makes recommendations to superiors when changes to product offerings, menu redesign, service, and/or staffing is needed.
  • Stays current on market and consumer trends in fine service, cuisine, and premium wine and spirits.
  • Initiates and fosters relationships with key business driving departments and/or persons.
  • Utilizes available service performance reports, social media feedback, and guest interactions to develop strategies to improve guest experience and service scores.
  • Assist with the research, development, interpretation and implementation of new venues, products, services technology and processes to ensure company’s competitive position in anticipation of changing customer needs within the dynamic hospitality/gaming environment.
  • Provide leadership in the development and monitoring of Beverage operations, fiscal budgets and marketing strategies to produce short-term and long-term profitability.
  • Educates direct reports on techniques for and drives results through effective business forecasting, planning, marketing, and sales building programs.
  • Reviews P&L performance, identifies areas of opportunity and actions on key drivers to create measurable improvements.
  • Connects annual and monthly budgetary targets, connects these to daily outputs, and communicates targets and expectations to managers.
  • Utilizes available financial reporting software and reports to support P&L performance, identifying revenue/cost opportunities, and managing day-to-day financial decisions.
  • Accurately forecasts business volumes and deploys resources against same. Utilizes demand based scheduling to drive labor outputs.
  • Develops workable solutions to solve routine and complex departmental problems.
  • Responds to evolving circumstances and reacts positively to unexpected changes in the business environment.
  • Forms partnership and alignment with inter-department counterparts to ensure decisions and standard operating procedures are clearly and consistently communicated.
  • Maintains comprehensive maintenance programs to maintain furniture, fixtures and equipment that comply with and support property standards and ratings (Mobil, Triple A, Forbes, and/or other rating standards).
  • Perform all other job-related duties as requested.

Desired Qualifications

  • At least 5 years of experience in food and/or beverage operations.
  • At least 3 years of senior restaurant/bar management experience in a similar environment or 4 years of management in other food and/or beverage operation environments.
  • Ability to read and interpret various analytics reporting to support P&L performance, identifying revenue/cost opportunities, and managing day-to-day financial decisions.
  • Ability to deliver complex messages clearly, in written and spoken forms, and presents articulately and professionally.
  • Ability to interpret market and property drivers of volume to accurately forecast business volumes in area(s) of responsibility.
  • Working knowledge of beverage operations.
  • Working knowledge of health, safety and sanitation regulations.
  • Working knowledge of beverage cost controls.
  • Excellent customer service skills.
  • Able to lead and mentor a team.
  • Have interpersonal skills to deal effectively with all business contacts.
  • Professional appearance and demeanor.
  • Work varied shifts, including weekends and holidays.
  • High school diploma or equivalent.
  • Able to effectively communicate in English, in both written and oral forms.
  • Must have valid Southern Nevada Health District Health Card and TAM Card.

Must be 21 years of age or older.
