Summary Of Position

The Block/ Meat Cutter prepares and cuts various types of meat, including but not limited to: brisket, ribs, and sausage while following established procedures and guidelines to maintain quality and consistency. This is a part-time, non-exempt position.

Duties & Responsibilities

  • Greet guest upon arrival and thank them as they leave.
  • Prepare and follow daily prep list every shift.
  • Assumes 100% responsibility for the quality of products served.
  • Knowledgeable and follows the standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Rotates all products properly.
  • Assists in food prep assignments as needed.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations.
  • Comply with strict safety and hygiene protocols in the handling, storage and cutting of meat(s) to guarantee the highest levels of food safety and hygiene in compliance with health and safety standards.
  • Set up and maintain a clean organized work area. Clean up and break down the station including proper food handling, storage, and sanitation practices, to maintain a clean and safe kitchen environment and prevent foodborne illnesses.
  • Operate and maintain equipment and tools, ensuring that they are in good working condition and properly disinfected to optimize efficiency and safety during meat cutting.
  • Communicate effectively with other staff members to fulfill customer orders, maintain an organized workflow, and ensure smooth operation in the meat block area.
  • Complete other tasks assigned by the management team.

Qualifications:.

  • Minimum 18 years of age.
  • Have reliable transportation.
  • Some restaurant experience a plus.
  • Be able to work in a standing position for long periods of time (up to 8 hours).
  • Must be able to lift 50 lbs.
  • Be able to communicate clearly and effectively.
  • Must be a team player and work in fast paced environment.

Have a valid Alcohol Server and Food Handlers Certification

Preferred Qualifications

  • Ability to speak Spanish a plus
  • Previous experience working in a BBQ restaurant
  • High School degree preferred but not required
