Job Summary: As the Director of Restaurant and Bars, you will be responsible for overseeing all aspects of our food and beverage outlets, including Peninsula Grill, In Room Dining, and Benne’s by Peninsula Grill. You will play a pivotal role in maintaining and enhancing our reputation for delivering exceptional dining experiences. This position requires strong leadership, strategic thinking, and a passion for delivering top-notch service.

Responsibilities:

  • Develop and execute innovative strategies to enhance the guest experience and achieve revenue goals across all food and beverage outlets.
  • Lead and mentor a diverse team of restaurant managers, bartenders, servers, and support staff.
  • Collaborate with the culinary team to create and update menus that reflect current food and beverage trends and meet the expectations of our discerning clientele.
  • Monitor and maintain high standards of service quality, cleanliness, and hygiene in all outlets.
  • Ensure compliance with health and safety regulations and alcohol laws.
  • Establish and maintain vendor relationships, negotiate contracts, and manage inventory to control costs while ensuring quality supplies.
  • Drive marketing and promotional activities to attract and retain customers, including special events, theme nights, and collaborations.
  • Analyze financial reports, budgets, and key performance indicators to make informed decisions and drive profitability.
  • Handle customer feedback, resolving complaints and ensuring guest satisfaction.
  • Keep abreast of industry trends and competitor offerings to maintain a competitive edge.

Qualifications:

  • Proven experience (3+ years) in progressively responsible roles within the food and beverage industry, including managerial or supervisory positions.
  • Strong understanding of fine dining, mixology, and culinary trends.
  • Excellent leadership, communication, and interpersonal skills.
  • Exceptional problem-solving abilities and a customer-centric mindset.
  • Knowledge of budgeting, financial analysis, and cost control.
  • Certification in Food Handling and Alcohol Service is a plus.
