Dining Services Director Job Description

Job Summary: The chief responsibility of a dining services director is to provide overall leadership and management of dining services operations. The job may also involve operating the department within stipulated budget and being financially accountable for the dining services department. Other important duties include supervising and training team members, food ordering, food preparation and delivery, conducting safety and sanitation programs, conducting inventory and rotation of products, keeping accurate records, and ensuring regulatory compliance.

Reports to: Executive Director

Essential Functions and Responsibilities:

· Ability to work with chemicals and cleaning agents.
· Ability to perform routine, repetitive tasks with frequent interruptions.
· Ability to work flexible hours, such as early morning, evenings, weekends, holidays, and ability to assist in emergency situations.
· Ability to work on call as needed taking calls at different times throughout the week.
· Ability to assist with the MOD (Manager on Duty) rotation.
· Ability to maintain and execute a daily, weekly, monthly schedule for all care associates and medication assistants. This includes monitoring call outs and late associates.
· Ability to plan, direct, control, communicate, and coach in the dining services department.
· Be knowledgeable of federal, state, and facility’s rules, regulations, policies and procedures.

Cooking Tasks

  • Cook a meal at least 2 times per week.
  • Circulate in the dining room to ascertain resident preferences and satisfaction with meals.
  • Create and implement a 5-week rotating menu based on the seasons.
  • Ensure that all foods are prepared to satisfaction of residents and in accordance with safe food handling practices.
  • Foster teamwork with co-workers, take actions which assist others beyond job responsibilities, treat others with respect, and have a positive impact on co-workers, residents, and visitors.
  • Follow the Menu Program that meets nutritional requirements.

Reporting Procedures

Follow established reporting procedures for the following:

  • Inform supervisor of supply or equipment needs.
  • Any damaged or loose fixtures, flooring, or tiling requiring replacement or repair.
  • Any unsafe or malfunctioning equipment.
  • Any conditions conducive to breeding insects, rodents, or other vermin.

· Keeps stock rooms, coolers, and freezers clean and rotated. First in, first out.

Cleaning Tasks

  • Maintain a clean kitchen and dining room including all equipment, walls, ceilings, vents, dry storage, cold storage, cooking areas, and preparation surfaces and dish storage areas.
  • Maintain designated budget.

· Oversees quality assurance meal presentation and portion control.

· Oversees that all food, beverage, and other items are labeled, dated, and stored properly.

· Provide input and support to the Executive Director on new hires and training staff in the dietary department.

· Perform other duties as assigned.

Education and Experience:

  • Must be 18 years or older. Exceptions may apply depending on state requirements.
  • 3 to 6 months related experience preferred and/or similar training.
  • Knowledge of senior living, Alzheimer's or a related dementia preferred.
  • Per state requirements an active state certification & training.
  • Current SERV Safe Certification or similar certificate required by the county or state.

Physical Demands and Working Conditions:

  • This is a physically demanding job that could or does require standing, moving, reaching, lifting, stretching, bending, and carrying things throughout the day. It involves proper handling and use of dietary supplies and equipment.
  • Position requires providing activities of daily living assistance to seniors and requires lifting and transferring or residents as appropriate.
  • Position could have exposure to extreme temperatures and humidity while entering refrigerated/freezer area, ovens, ranges, dishwashing machines, and steam tables.
  • Must be able to lift, push, and/or pull 50lbs.

Knowledge and Skills:

  • Ability to read and write comprehend simple instructions, short correspondence, and memos.
  • Ability to communicate effectively in English with residents, family members and other associates.
  • Ability to apply common sense understanding to carry out instructions furnished in written or oral form.
  • Ability to exercise judgment in emergency situations and seeks assistance when needed. Basic level of a skill and can follow written or verbal instructions.
  • Ability to at times work flexible hours, such as early morning, evenings, weekends, and holidays.
  • Ability to assist in emergency situations.
  • Ability to understand facility’s fire and disaster plans; follow established procedures during drills and actual emergencies.
  • Basic technical skills to complete a few repetitive and well-defined duties.
  • Basic knowledge of the organization in order to answer basic questions.
  • Basic knowledge of federal, state, and facility’s rules, regulations, policies and procedures.
  • Follow defined safety codes while performing all duties.
  • Follow defined Infection Control procedures.

Required Attendance:

  • Attend scheduled department staff meetings.
  • Attend in-service educational programs.
  • Attend annual recertifications for state required license & certificates.
