Colorado Mental Health Institute at Pueblo - (State Hospital, Pueblo)

The purpose of the Nutrition Services Department is to provide quality food service and medical nutrition therapy to more than 1500 clients in a mental health care facility and the Colorado Department of Corrections. Description Of Job

About the Nutrition Services department: The purpose of this position is to serve as a first-line food service supervisor. As a supervisor, the position ensures safe, compliant and effective production of meals within the Nutrition Services Department. This includes, but is not limited to, preparation and service of meals, service to patients, portioning, cooking, safety and sanitation, quality assurance, and compliance of state and federal regulations and policies and procedures. The supervisor exercises direct, formal control over assigned staff. This work includes accountability for actions and decisions impacting the pay, status, and tenure of others and for determining operations to accomplish the work. The position works alongside dining services III and IV classifications to support the preparation and service of meals, snacks and beverages for clients in a high and/or medium security setting while adhering to federal, state and local regulations. May be scheduled to work in the North Kitchen or dining rooms based on business needs.

Duties

Production Cooking QA Loading checks

  • Works alongside Dining Services III and IV classifications and supervises the production, preparation and service of meals. Assures that standardized recipes, written instructions, portion sizes, load slips, production sheets, and food safety guidelines are accurate, followed and maintained based on load slips, tallies, menus and/or CBORD recipes. Position completes quality assurance checks of food items during the loading process to ensure food distributed to satellite kitchens is loaded at safe temperatures, in adequate amounts, and to the correct location. Position problem solves, quickly, when there are inadequate quantities or a last-minute substitution needs to be made taking into account allergens, cooking method, and any impacts this may have on modified diets. Calculates correct quantities, verifies load slips against census and adjusts if errors are present. Position oversees morning operations of the Centralized kitchen and adjusts production and staffing to ensure critical daily operations are met. Obtains recipes from CBORD program (North Kitchen supervisors) or recipes from load slips (Dining room supervisors) and provides to each production or kitchen area; adjusts recipes as needed for yield and quality - sends recipes updates to the diet office. Evaluates the appearance, taste and texture of food to ensure it is attractive, appetizing and at proper temperatures. Coordinates call backs, checks in deliveries in dining rooms, compares load slips to ensure accuracy and stores goods by using the First in, First out method (FIFO). Assists with controlling costs by overseeing that proper amounts are produced, quality standards are met, stock is rotated, properly labeled and stored, and inventory is properly accounted for. Compiles orders for assigned production areas and/or kitchen (i.e. Bakeshop, Cook-Chill, Conventional, Department of Corrections, Diet Kitchen, dining room, etc.) and work with the Material Handler Supervisor and/or Food Service Manager to ensure orders are completed. Under guidance from the storeroom manager, develops and maintains PAR levels for designated areas and completes inventory of items for each production or kitchen area (Bread and Milk order; adjusts food and supply requisitions in order to reduce costs. Communicates menu substitutions, recipe, tally or load slip discrepancies, substandard products or other production issues with diet office personnel and food service managers.

Production cooking

  • Trains and works alongside employees on regularly assigned tasks, new techniques, methods, and standards. Directs food service staff to provide quality food service and comply with applicable state and federal laws, regulations, policies and standards. This position directly supervises dining services staff in assigned food production areas by orienting, training, coaching, and motivating subordinates. Prepares, reviews and determines PMAP ratings and midyear reviews for assigned employees, including progress review and evaluation. Provides guidance to work leads (Dining Services IV) and cooks (Dining Services III) to assist with completion of PMAPs. Facilitates and encourages subordinate staff to make individual commitments to accomplishing the department's mission by assigning tasks, monitoring progress and workflow, checking the product, scheduling work and establishing work standards; enforces CDHS, CMHHIP and departmental policies and procedures. Monitors employees’ time and ensures schedules are followed (accountability). Works with the nutrition services staffing office as applicable to support completion of schedules and modified duty assignments for assigned work units, approves leave and ensures coverage for essential positions in accordance with departmental policies and Union agreement. Works with Employee and Labor Relations to address performance concerns and completes Memorandum of Understanding and/or Performance Improvements plans as necessary; provides supporting documentation to appointing authority recommend progressive discipline to include corrective and disciplinary actions, completes performance plans and appraisals, supervisory section of IOJ reports and Incident Reporting form. Implements consistent 1-1 meetings with subordinate staff. Checks emails regularly and responds within a reasonable time frame. Position is involved in the recruitment of dining services personnel by participating in Subject Matter Expert (SME) panels and interviewing process; recommends hire, promotion or transfer of positions. Provides coverage for production areas as needed due to staff shortages, call-offs, etc. Resolves informal grievances and addresses/resolves personnel issues.

Regulatory and Policy Compliance

  • Assures that high-quality food is prepared by conducting routine quality assurance checks and providing instruction to employees on cooking procedures, portion control, and diet accuracy. Ensures compliance with Hazard Analysis and Critical Control Point (HACCP) Standards of Practice (SOPs). Responsible for assuring proper documentation of temperatures, production records, cleaning schedules, food safety and sanitation and other necessary documentation is completed daily for assigned production areas. Enforces compliance with the Colorado Department of Public Health & Environment (CDPHE) and Joint Commission regarding sanitation and food safety. Completes quality assurance checks and food safety audits as assigned. Works with food service manager and food safety and quality specialist to develop corrective action plans to correct identified compliance concerns. Opens and/or closes a large production kitchen and ensures security of department premises through monitoring knife/utensil count records and adherence to key, secured areas, and contraband policies. Ensures all food service equipment is kept in working order and the kitchen is kept clean and sanitized. Completes IOJ and incident reports as applicable.

Work Schedule

Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights

  • The current schedule for this position is Sunday - Thursday, 4:30 am - 12:30 pm, with Friday and Saturday off, but may change without prior notification based on busy demands.

Minimum Qualifications

  • Four (4) years of food service experience*.

Special Qualifications

  • Based on the new Colorado Food Code, must have and maintain ServSafe Food Protection Manager certification OR obtain within 6 months of hire.

Preferred Qualifications

  • Experience providing Supervisory/Work Lead duties in a Correctional, Military, or Institutional kitchen.
  • Working in a commercial or institutional setting, utilizing raw ingredients, following prescribed large scale recipes to create meals from scratch;
  • Working as a cook in a high volume, batch production kitchen, following prescribed large scale recipes, monitoring production schedules and maintaining inventory and supply orders;
  • Experience in Corrections or high-security kitchen.
  • Serve Safe and/or Food Protection Manager Certification.
  • Knowledge of medical diets
  • Timekeeping knowledge and experience with completing schedules.
  • Experience training personnel.
  • Knowledge of Microsoft programs and Google (calendar, email, Drive, etc.).
  • Excellent customer service skills.

  • Position may require heavy lifting: Exert up to 100 lbs. of force occasionally, and/or up to 50 lbs. of force frequently, and/or up to 20 lbs. of force constantly to move objects.
